on monday I made J some gem Squash mixed with chicken fillet and broccoli (the chicken broccoli i mashed very finely to be like a paste) and just added a tiny bit of butter and salt. and J loved it ...

Fish with Leek and Cheese sauce (6 - 9 months)
150gr Fish (I used hake fillets)
175ml Milk
30gr Butter
60gr Leek
45r Cheddar
1tbsp Flour
1 bay leaf

1) Put fish into pan with milk and bay leaf. Bring to boil, then cover and simmer until the fish is well cooked. Strain the milk and keep to one side, also keep fish to one side (seperate) Make sure there are no bones in the fish
2) Melt the butter and add the finely chopped leek, until it is soft
3) Stir the flour into the leek mixture andmake a paste, cook for 1 minute.
4) Add the milk bit by bit, bring to the boil and cook until the mixture thickens, stir all the time.
5) Remove from heat, add the cheese until it has melted and puree the fish with the leek and cheese sause.

Baby Breakfast Ingredients


4 tbsp rolled oats
2 tbsp raisins
6 tbsp milk
1 small eating apple (approx 130g) peeled, cored and chopped)
1 small ripe pear, peeled, cored and chopped
1 tbsp Annabel Karmel’s Pear Concentrate



Baby Breakfast Method:


Simply soak the oats overnight to make this delicious breakfast…
It’s a good idea to keep portions of apple and pear puree in the freezer to mix with the muesli.
Soak the oats in milk overnight or for at least a couple of hours. Meanwhile Put the chopped apple and pear in a saucepan together with the pear concentrate cover and cook for 10 minutes over a low heat. Remove from the heat and mash with a fork.
In the morning, stir the cooked apple and pear together with the oats and raisins.

LOVELY LENTILS:

Ingredients


30g (1oz) butter
125g (4oz) leeks, finely sliced
30g (1oz) celery, chopped
30g (1oz) red pepper, cored, de-seeded and chopped
60g (2oz) red lentils
100g (4oz) 1 medium carrot, peeled and chopped
250g sweet potato, peeled and chopped
1 bay leaf
15 fl oz vegetable stock or water

Method:


Melt the butter in a saucepan and saute the leeks for 2 to 3 minutes. Add the celery, red pepper and carrot and saute for 5 minutes. Add the lentils, saute for one minute, then add the sweet potato and bay leaf and pour over the stock. Bring to the boil, then reduce the heat, cover and simmer for about 30 minutes, or until the vegetables and lentils are tender. Remove the bay leaf and blend to a puree.

FAVOURITE PORRIDGE:

Ingredients


150ml (5 fl oz) milk
15g (1/2oz) porridge oats
6 ready to eat dried apricots, chopped
1 large ripe pear, peeled, cored and cut into pieces

Method:


Put the milk, porridge oats and chopped apricots in a small saucepan, bring to the boil and then simmer, stirring occasionally for 3 minutes. Puree together with the chopped pear in a hand blender.

Information:
Suitable for freezing
MAKES 4 PORTIONS

Whole cow's milk can be used for cooking or mixing with food for babies 6-12 months but it must not be given as baby's main milk source until 1 year old.

Nicci's favourite:

1tbsp Olive Oil
1/4 onion, chopped
200g shin of beef
2 carrots, peeled and chopped
Dried peaches or apricots (2 or 3)
500ml stock (beef will work, vegtable stock works too)

Fry the onion in the oil. Sear the meat on both sides. Add the carrots and stock and simmer until the meat is tender. Puree and freeze in ice trays. I add a starch or some butternut, and we're good to go!

Cooked all in one pot and pureed then serve it with some cous cous - they loved it!

Put in purity bottled and freeze

I got this from Sister Lilians Child care book, and Z loves it all

6 - 8 MONTHS

PEACH AND PEAR MASH

1 Ripe peach
1 Soft ripe pear

1. Peel pear and peach.
2. Mash and serve.


SUMMER BANANA MOUSSE

½ Ripe banana
5 Drops fresh lemon juice

1. Peel banana.
2. Mash banana with fork.
3. Add lemon juice.
4. Mix in blender until foamy.
5. Serve.
6. Older babies can dip a rice cookie in the mousse as alternaive.


AVOCADO CREAM

½ Ripe avocado
10 ml Breast/coconut/formula milk
5 Drops lemon juice

1. Mash avocado.
2. Add milk and mix for 30 seconds.
3. Add lemon juice.
4. Can be served as a meal on its own or as a dip for fingerfood.









GREEN AND GOLD BAKE

1 Small cup hubbard squash blocks
3 Pieces of very fresh broccoli
4 Baby carrots

1. Steam hubbard squash and babycarrots until soft.
2. Cut off green tips of broccoli and keep separate.
3. Mash hubbard squash andput in small oven friendly bowl.
4. Sprinkle raw broccoli tips over hubbard squash.
5. Cut babaycarrots into small rings and arrange ontop of hubbard squash.
6. Grill for 3 minutes or until top coat is golden brown.


YUMMY CARROT

1 Sweet potato, peeled and cut into small blocks
1 Medium carrot, cut into ringlets

1. Steam sweet potato until soft.
2. Cook carrots in a bit of water until soft.
3. Keep 50ml of carrot water.
4. Grate cooked potato and carrot together and mix.
5. Add 50 ml water to mix.
6. Mash in food processor if baby doesn’t like the texture.


POPEYE’S SPINACH AND SQUASH DISH

1 Squash
1 Spinach leaf
1 Baby potato

1. Half raw squash and remove pips.
2. Steam squash until soft with hollowed side down.
3. Rinse spinah leaf and cook for 3 minutes in very little boiling water.
4. Cook potato until soft.
5. Peel squash & potato & mash together. Chop spinach into small pieces.
6. Mix all the vegetables in the spinach water and serve.
8 - 12 MONTHS

POTATO BASKETS WITH AVO

½ Ripe avocado
1 Medium potato
3 – 4 Drops olive oil
5 Drops lemon juice

1. Bake potato in oven until soft.
2. Mash avo and mix with olive oil and lemon juice until smooth.
3. When the potato is soft, cut in half and cut out potato out of skin for basket.
4. Mash potato andput back in basket.
5. Add one tablesppon of avomix to every “basket”.

POTATO-BUTTERNUT

1 Medium potato
1 Small cup of butternut

1. Cook potato and butternut seperately until soft. Keep water.
2. Peel the potatoes and mash with butternut.
3. Add water until desired texture.

GREEK POTATO-BUTTERNUT

1 Sweet potato
1 Cup butternut
5 Drops olive oil

1. Peel potato and chop into blocks.
2. Steam the sweet potato and butternut until soft.
3. Mix well with olive oil.

Another plan: I cook single veggies (steamed and mashed) like Hubbard squash, carrots, beans and potato and freeze them in icetrays. Then I can combine them into meals for N, for instance chicken with beans and potato or beef with carrots and squash.

Hi! Chicken thighs, mince or shin of beef, with a little onion/tomato puree/stock for flavour.

I cook it a long time on low heat until tender, then I puree it with my handheld blender.

Shepherd's Pie:
2 tomatoes
¼ onion
225g potato
50g button mushrooms
115g lean minced beef
250ml/1 cup water
15ml/1 tbsp tomato ketchup
Pinch of dried mixed herbs


Method
1) Make a cross cut in each tomato and put them in a small bowl covering them with boiling water. Leave to stand for 1 minute then drain and peel off skins. Cut into quarters and scoop out seeds.
2) Chop the onions finely and chop potato and slice the mushrooms.
3) Dry-fry the beef in a saucepan for 5 minutes till completely browned.
4) Add tomatoes, potato, mushrooms and onions cooking for a further 3 minutes, stirring well to blend flavours together.
5) Add water, ketchup and herbs, bringing to boil then reduce heat, cover and simmer for 40 minutes until meat and vegetables are tender.
6) Process or mash the meat and vegetables just enough to give desired consistency

Yum yum custard

(Part experiment, part High School home economics)

375 milk (I use Parmalat First Growth milk. You can probably use formula, though I can't guarantee that you'll get the stench out of your kitchen...)
3 egg yolks
40ml Maizena
pinch of real vanilla seeds/ 5ml real vanilla extract (no essence!!)
heaped tablespoon sugar

Heat 300ml of the milk and the vanilla in a saucepan to boiling point (do not boil). Mix the Maizena and sugar with the leftover milk. Beat the egg yolks. When the milk is at boiling point, mix it with the sugar and flour mixture in a mixing bowl. let it cool a bit. Mix spoonfuls of the milk mixture into the beaten egg yolks until the eggs and milk are roughly the same temperature. At that point, mix the eggs and milk together. Put it back onto the stove on low heat and stir until thickened.

This is great with fruit as a dessert. Plus (I haven't tried it but I will!), this should make a great ice-cream. Just pour into a freezer-proof container, and stir regularly to break up any ice-crystals.

Oh, and mommies with lactose intolerant-kiddo's: Soy milk should be fine.

MARTHIE'S YUM RECIPE

He has the same for lunch and dinner and sometimes I vary, but mostly the same so I make 14 portions.

He absolutely LOVED it!

this is what I did:

Fried onion
Add Beef Strips (Like for sir fry)
Add Butternut blocks
Add Carrot Blocks
Add Frozen peas/corn/carrot mix
Put 3 x tomatoes in hot water with a X on each side. Peel and take out the pips (Makes it bitter) cut into quarters and add.
Add stock (any)
I then added the Green Fettucini (Just crunched up into pieces)
Boil Slowly for a hour or so.

Mash to whatever consistancy you want!

I have not made much fresh fruit for K as it seems a mission and most you can't freeze but I tried this yest and she loved it, it's also suitable for freezing. I have been battling to find lose pears and as DH 7 I don't really eat them seemed a waste to but a packet so I just added purity pear at the end. seems strange to use the dried apricot but K finished it all up this morning. So mommies give it a shot! I used a drop of vanilla essence in it and water not juice.

I warmed it up for her and added a little extra water.

Ingredients


1 apple, peeled, cored and chopped
60g dried apricots, roughly chopped
4 tbsp water
1 ripe pear, peeled, cored and chopped
1 vanilla pod (optional)

Method:


Place the apple and dried apricots in a saucepan with the water. If you like you could split open a vanilla pod scrape out the seeds and add these to the fruit. Cover and simmer for 5 minutes. Add the pear and continue to simmer for 2 minutes. Puree the fruit until smooth.

Information:
Suitable for freezing

Cook roast with some onions for about 3hours
Add veggies...
(Optional)

~ Patty Pans
~ Leeks
~ Peas
~ Pumpkin
~ Butternut
~ Parsley
~ Mushrooms

Cook till veggies are soft, cut meat up finely and mash up with veggies...
Add some marmite and butter... Little guy absolutely loves it...

last night i gave becca a cube of chicken, some cous cous and brocolli and cauliflour and cheese sauce.

the chicken was just normal chicken puree.

for the cauliflour and brocolli cheese sauce, i steamed the veggies.

to make the cheese sauce, i use a bit of unsalted butter and some corn starch and added formula, all just by guessing ladies sorry and then added like a table spoon of grated cheese... it made plenty so i freezed it in cubes.

but she loved it!

also i took half a gem squash, put some cous cous in and a cube of monz's shepards pie mince in... also loved it, another meal i put chicken in. she loved it and was fascinated by the "bowl" (gem squash half)

Avo can be a very useful veggie which you can mix with many things
I have done:

Tomavo (Tomato and Avo mixed)
Avo and cottage cheese (smooth)
Avo and tuna with little cottage cheese and couscous
Avo and potato
Avo on bread,rice cookie
Avo and chicken


During summer when mango season comes - it is super delicious to mix
Mango and Banana
Mango and Apple
Mango and Pear
You can freeze all of the above

I also do throughout the year
Pear and Banana
Apple and Banana


veggies:
Potato and Beans
Potato and carrots
Butternut and sweet potato mix
Although once the kids are over 1 year they want to start eating the fruits in its real form.... like an apple or pear or banana or nartjie.

Fry onions, chopped up chicken breast till almost cooked.

Ingredients
25g minced pork

1 carrot, peeled and chopped

Half a leek, washed and finely sliced

2 ready-to-eat dried apricots

Half a parsnip, peeled and chopped
Method
1. Dry fry the minced pork until cooked through, transfer to a small casserole dish

2. Add the remaining ingredients to the casserole dish with just enough water to cover them

3. Cook in a moderate oven until soft

4. Blend all ingredients together
